I believe that it is just poor workmanship from the engraver. His memory of what a deer is, is faulty and the image comes out in a different likeness than it should be...I had the same thought, but what else is it?
... and still more cows on a relatively recent watch. When this was gifted to me, new, in 1968 I rolled my eyes, but I realize it is now over 50 years old, still with its original box and papers. It has a decent quality 15 jewel Unitas movement. [Is it collectible yet?]Well, here's one even less special, ...
That first one is truly a "hunting case."With this posting of two more watches, I think I've shown my entire menagerie. These two watches are discussed in https://mb.nawcc.org/threads/two-special-quarter-repeaters.172274/.
The first of these two hunter watches is an unsigned 18k grande et petite sonnerie trip quarter-repeater that features a retriever with what looks like a dead bittern in its mouth.

The second is this 18k quarter-repeater/perpetual calendar with retrograde days and moonphase dial, probably by B. Haas Jeune. One cover has a pair of fierce lion or leopard heads in applied white gold. The same pair are engraved on the other cover.

I've seen some pretty strange deers and horses on watch cases too. Here's a rather fanciful butterfly on an Illinois KW.
I spent some time studying entomology when I was younger, and I can tell you that this butterfly is not anatomically correct for any North American species.
I still like it.
