In the past I have worked almost exclusively on 400 day clocks. Recently I read D. Rod Lloyd‘s book on 400 day clock repair. It suggested that us 400 day people should give a large pocket watch a try, so I bought a junker to take apart and try to reassemble. For what it’s worth, here are a few things I learned:
1. My screwdrivers were all too large for watches. I had to file my smallest one down to have a prayer with those small screws.
2. Same time-only gear train As 400 day.
3. Had a tough time getting pivots into those microscopic holes in the jewels.
4. The balance wheel performs exactly the same function as the 400 day pendulum with the hairspring analogous to our torsion spring.
5. Finally, I don’t think I’ll try that again.

Not trying the tiny stuff, just don't have the tooling. Could give the three train movements a try, they can be fun.
