    "Cook Rice and Potatoes" (the title will become clear when you read the article) updates some of the information about the Boston Watch Company and the American Watch Company in the years 1857 to 1858.

    It is based on documents in the Baker Library, Harvard University, the Suffolk County Court archives, and some other sources.

    The article is an addendum to my previous work in "Watchmaking and the American System of Manufacturing", adding new information and revising the rates of production.

    In addition, it discusses Irish immigration at that time and suggests that these immigrants were part of the American Watch Company's workforce.
