There are a few books worth checking. One is Pocket Watches 19th and 20th Century by Alan Shenton. This is not a easy book to use but it shows lots of examples and sometimes has date information. You may see some similar movements. Another book worth a look is The Technique and History of the Swiss Watch by Chapuis and Jacquet.
Yours is a typical Geneva bar movement. With S &F on the regulator it was made for the US or English Market.
Gilbert was probably a broker or retailer who used a very strong infrastructure to assemble a movement, dial, hands, and case.
Pritchard's Swiss Timepiece Makers 1775-1975 lists Joseph Gilbert as a Geneva Watchmaker of the late 19th century with one known Key Wind Key set example.
