Can anyone tell me what the star in the below picture of a 14s Waltham means? I've never seen it before.

I am not sure if it has any other significance, but primarily it is to call the attention of the watchmaker to the hole in its center. To remove the stem/crown (prior to removing the movement from the case) one must use a rod or screwdriver in the hole to lock the winding/setting assembly in place, thus allowing the watchmaker to unscrew the stem from the winding/setting assembly. The attached picture shows the internal parts.
