The watches produced by Assman for Gruen can usually be found for under $1,000. They do take a bit of looking though. The same watch signed by Assman costs quite a bit more.

Well, well, I would be happy to buy one of those fabulous Gruen-Assmanns (double 'n') for less than $ 1,000. In german auctions, they always cross the EUR 1,500 line (if they are all right, of course, with a nice dial and a near mint case). Great watches, mostly gold train (even better quality than the regular Assmanns), 1A grade.
However, why not trying the Glashütte eGmbH watches?
They were produced in the early 20s until the 30s and are (wrongly) regarded by many (german) collectors as 'inferior mass products'. In fact, they are thoroughly constructed by Hugo Müller (formerly Lange's chief adjuster), quite high-grade. You would get a silver open face for less than $ 1000. Look out for the black triangle with the white 'G' and the inscription 'Original Glashütte Präzisionsuhr'.
Ohter high grade german watches are: Eppner Bros., Silberberg (not as good as Glashütte, cheap, but rare) or Junghans, Schramberg (black forest) - pocket watches since 1903, not very high-grade.
