Sonds lke you're asking a couple of different questions. One is how to set the time, and the other is how to open a case. Kent Singer has some very helpful instructions for opening various cases here - http://www.knology.net/~ksinger/opencase.txt
Setting the time is slightly different than opening the case - although with some types of watches and cases, you might need to open the back or remove the bezel, but probably not likely for a regular 7 jewel hunter.
If this is a "pendant wind - pendant set" watch, simply turn the winding knob to wind it, and pull it out to set the hands.
If it's "pendant wind - lever set," then it winds the same, but to set the hands you need to pull out a small lever that in a hunter cased watch should be slightly protruding from under the bezel (at about the 4 o'clock position - no need to take the bezel off), and then turn the winding knob to move the hands. Push the lever back in when you're done.
There are others (such as a "key wind - key set", which I don't think you have), but if you can't tell and can't wind it as described above, if you're able to use Kent's instructions to open the back, tell us the serial number and from that we should be able to tell you what sort of setting/winding set up you have.
