Hi dagwra:
Usually, we don't remove just the crystal. We open, or take off, the bezel and the crystal comes along with it.
You might find the information in "How To Open A Pocket Watch Case (http://k_singer.home.comcast.net/opening_pocket_watch_cases__k.htm)", or Opening the Case (http://www.ozdoba.net/swisswatch/pocket_howto.html#open) useful.
If it is a hunting-case, there should be a narrow slot within which to put a thumbnail to pop it off.
Good luck,
