While I picture would be helpful, I can tell you that the canon pinion probably comes off by knocking the arbor out from the front. These pins actually pass through the center wheel hub and are friction fit into the canon pinion.
What I've been doing with these is setting the movement dial side up on my staking tool but resting the center wheel arbor onto a button of pithwood. It then use a small punch to drive the pin out through the canon pinion. Once it lets loose it's usually easy to pull the pin out.
I suspect that this is your situation however without seeing the watch I can't be 100% sure.
Is the "winding crown pin" the detent screw?
